Looks whaley. What kind of sea life is there in the Gulf that would match that loose description?

It's a dead whale. Looks like some kind of baleen whale.

Initially I thought it was a photoshop job using a dead croc, but Lordmongrove is right whale it is.

No it wouldn't be; with those vertebrae, which from some angles look very like the scales on a croc's tale, it's a mammal.

Looks like a Whale to me, what appears to be vertebrae is just rotting flesh.

Yeah if the ships crew couldn't discern it as a whale, they wouldn't have just left it. Even the most absolute hard-headed laymen knows the concept of a "sea monster" or whatever local name it might have.
